Mint Nut Bread

2 ½ cups flour

1 egg

1 cup Brown sugar packed

2 tps baking powder

3 tbps oil

1 cup fresh chopped mint

1 ½ cup of milk

¾ cup apple juice + ¾ cup milk

 

 Preheat oven to 350 F. Mix flour, baking powder and sugar in a large bowl.

 Whisk together oil, milk and egg. Blend the mixture and add nuts and mint.

 Bake in greased bread pans in the preheated oven for 50 – 60 mins.

 Cool and slice.

Herb Cream Cheese spread

 

Two 8 oz packages cream cheese softened

½ cup of butter softened

1 tsp lemon juice

3-4 tsp Herbes de Province ( Dried thyme, Rosemary, savoury, marjoram and basil)

1 garlic clove

 Blend all ingredients server at room temperature.

Lavender Cookies

 

2 eggs

½ cup butter

1 cup sugar

1 tsp Lavender leaves

1 ½ cups flour

1 tsp baking powder

pinch of salt

Confectioners’ sugar

water

 

Preheat oven to 350 f. Put eggs, butter, margarine, sugar, and lavender in a bowl and mix well. sift flour, baking powder and salt into a mixing bowl. Add

other ingredients and stir until well blended. Drop dough, a tsp at a time onto to

greased cookie sheet. Sprinkle lavender fleurettes on top. bake until lightly

browned ( 10 mins ) Blend enough water into confectioner sugar to make a smooth paste. ice the cookies and let them set until frosting is firm.

 

Sun Tea

 

For hundreds of years, native Americans used the sun as a source of heat to brew herbal beverages with out boiling away the natural flavours. The sun’s

infrared and ultraviolet rays heat the water but keep it below the boiling point. Flavour is released from the herbs but not from the oils and acids that can give

an acrid taste if it isn’t drunk soon after brewing. This method also saves energy.

 

Take a gallon jar and fill it with cold water preferably one with a glass cover.

Add 4 to 5 of your favourite teabags to this. Add a handful of clean, rinsed mint and lemon balm. Set the jar in the sun for 3 to 6 hrs.

Remove the tea residue from the water as soon as you bring it in from the sun.

Enhance the tea with lemons, oranges and sugar.

Add Ice and enjoy!
